Goji Seed Quinoa Salad

Try out it this delicious, energy rich, nutrient rich salad containing ingredients of our favorite Morganic products.

Serves 6 people

Ingredients for the salad

  • 250g Health Solutions Mixed Quinoa (Uncooked)
  • 300g fresh diced tomatoes
  • 200g fresh parsley finely chopped
  • 50g mint leaves finely chopped
  • 3 finely chopped spring onions
  • Half a teaspoon Health Solutions Fine Pink Himalayan Rock Salt
  • Half a teaspoon black pepper
  • Handful of Naturgreen Goji Berries
  • Handful of Naturgreen 6 Seed Salad Mix

Ingredients for the dressing

  • Half a teaspoon Health Solutions Fine Pink Himalayan Rock Salt
  • Half a teaspoon black pepper
  • 3 tablespoons of lemon juice
  • 6 tablespoons of Crudigno Extra Virgin Olive Oil
  • 1 teaspoon of Ecoato Thousand Flowers Honey
  • 1 garlic clove, crushed

Method

  1. Cook the quinoa for 10 to 12 minutes in simmering water. Then drain and allow it to cool for 5 minutes.
  2. In the meantime, mix together all the dressing ingredients.
  3. Add the tomatoes, parsley, mint and spring onion to the dressing.
  4. In frying pan, toast the seeds for 1 to 2 minutes. Then add to the dressing.
  5. Finally mix together the quinoa and the dressing. Sprinkle the goji berries on top.
